Apple Pancakes

Prep Time: 15 minutes Cook Time: 10 Minutes Serving Size: 4-5 pancake slice

Ingredients:

  • 1 large red apple

  • ½ cup of blueberries

  • ½ cup of raspberries

  • 4-5 tablespoons of nut butter of choice

  • 1 cup pancake mix

  • ¾ cup of water

  • 2 tablespoons canola oil

  • 2-3 tablespoons of Maple syrup to drizzle on top

  • 1 tsp cinnamon

Directions:

  1. Prepare the pancake mix to the box instructions, usually with a ratio of 1 cup pancake mix to ¾ cup water or milk. Mix together in a large bowl and set aside.

  2. Rinse and drain the berries, and set aside. Wash the outside of the apple. Cut out the core in the middle of the apple, and slice the apple into slices assembling 4-5 slices shaped similarly to a donut.

  3. Spread 1 tablespoon of sun butter completely on one side of the apple slice, repeat until all slices are coated. Set aside on a plate

  4. Heat a skillet or pan to medium heat, and add 2 tablespoons of oil.

  5. Dunk the individual apple slices into the pancake batter until covered completely. Immediately transfer to the skillet/pan. Cook for 2-3 minutes on each side, flipping in between.

  6. Serve with maple syrup, cinnamon, and berries on top. Enjoy this fun upgraded pancake!
