Blueberry Feta Dip
Prep Time: 10 minutes Cook Time: 5 Minutes Serving Size: 1 3/4 cup
½ cup goat cheese
1 cup/8oz of full fat feta cheese. *Substitute cream cheese if cannot find
2 tablespoons extra virgin olive oil
1 carton of fresh blueberries
3 tablespoons of honey
1 package of gluten-free crackers
3 tablespoons warm water
Rinse and drain the blueberries, set aside.
Add feta, water and goat cheese to the food processor. Blend together and slowly add in the olive oil and honey until the consistency is creamy. Add in the blueberries, leaving a few aside to top the dip and blend on high until combined.
Scoop the dip into individual bowls and top with the rest of the blueberries. Serve with crackers to dip. Enjoy this savory/sweet snack! Add more honey on top for a sweeter taste.
